Orange Glazed Sweet Potatoes

  • 6 medium sweet potatoes                              

  • 1-tablespoon cornstarch or plain flour

  • 2 teaspoons grated orange rind                  

  • 3 tablespoons melted margarine                      

  • ¼ cup brown sugar

  • ¼ cup granulated sugar                                     

  • pinch of salt

  • 1 cup orange juice

Heat over to 350º F. Boil the unpaired potatoes until tender, about 30 minutes. Drain; peel and place in a shallow baking dish. Cook remaining ingredients and pour over potatoes and bake 30 minutes. Yield: 8 servings.
