Glazed Sweet Potatoes

6 medium sweet
potatoes

1-tablespoon cornstarch or plain
flour

2 teaspoons grated orange
rind

3 tablespoons melted
margarine

¼ cup brown sugar

¼ cup granulated
sugar

pinch of salt

1 cup orange juice
Heat over to 350º F. Boil the unpaired
potatoes until tender, about 30 minutes. Drain; peel and
place in a shallow baking dish. Cook remaining ingredients
and pour over potatoes and bake 30 minutes. Yield: 8
servings.
