Sweet Potato Wedges

1 tablespoon plus 1 teaspoon
margarine

1tablespoon plus 1 teaspoon
unsweetened orange juice

1 ¼ teaspoon ground cinnamon

2 medium-size sweet potatoes,
peeled and each cut lengthwise into 8 wedges (about 1
pound)

Orange slices (optional)

Fresh parsley sprigs (optional)
Place margarine in an 8-inch square
baking dish; microwave at HIGH 30 seconds or until melted.
Stir in orange juice and cinnamon; add potatoes, tossing to
coat. Cover with wax paper. Microwave at HIGH 6 to 8 minutes
or until tender, stirring and turning dish once during
cooking time. Garnish with orange and parsley, if desired.
